Cheesy-mite scrolls

Ingredients:

- 30g butter

- 2 cups self-raising flour, sifted

- 3/4 cup milk

- 1 tablespoon Vegemite

- 3/4 cup reduced-fat tasty cheese

- Extra milk, to brush

- 1/4 cup grated cheese, to sprinkle

 

Method:

Step 1

Preheat oven to 220C/200C fan-forced.


Step 2

In a bowl, using your fingers rub butter into sifted self-raising flour until mixture resembles breadcrumbs. Make a well in centre. Add 3/4 cup milk. Stir with a butter knife until mixture forms a soft dough, adding extra milk if necessary. Turn onto a lightly floured surface and knead gently until smooth (don’t over-knead).

Step 3

Roll out dough to form a 20cm x 30cm rectangle. Spread Vegemite over dough, leaving a 1cm strip along 1 long side. Sprinkle over 3/4 cup reduced-fat tasty cheese. Roll up firmly from long side. Trim ends. Cut into 8 x 2.5cm thick slices. Place 3cm apart onto 2 baking paper-lined baking trays. Brush with extra milk. Sprinkle with 1/4 cup grated cheese. Bake for 20 minutes or until golden. Cool and store in an airtight container for up to 2 days.

Pancake Day treat

Ingredients:

– 120g Plaistowe dark cooking chocolate, chopped
– 10 strawberries, washed, dried
– Canola cooking spray
– 375g Green’s Original Pancake Shake
– 400g fresh ricotta
– Large pinch ground cinnamon
– Green’s Maple Flavoured Syrup, heated, to serve

Method:

  1. Step 1

Line a plate with non-stick baking paper. Melt the chocolate in a heatproof bowl over a saucepan of simmering water. (Alternatively, in a microwave safe bowl in on Medium/50% power, stirring every minute.) Holding the strawberries by their stalks, dip halfway into the melted chocolate. Transfer to the lined plate and refrigerate until set.
  1. Step 2

Spray a frying pan with the canola cooking spray. Heat over a medium heat. Prepare and cook the pancakes according to packet instructions.
  1. Step 3

Combine the ricotta and cinnamon. Layer 3 pancakes with one-quarter of the ricotta mixture on a serving plate. Repeat with the remaining pancakes and ricotta.
  1. Step 4

Arrange the strawberries on the top of each pancake stack. Drizzle with maple flavoured syrup to serve.

The Chilli con queso Recipes
Ingredients:

Method:

Step 1

Melt the butter in a medium saucepan over low heat. Add the shallot and garlic, and cook for 1 minute or until shallot softens slightly. Add the chilli powder and cook, stirring, for 30 seconds or until aromatic.

Step 2

Stir the sour cream into the shallot mixture. Add the cheddar and cook, stirring, for 2-3 minutes or until the cheddar melts. Stir in the jalapeno chilli and coriander. Transfer to a heatproof serving bowl and serve with the radish and corn chips.
